What's for dinner - Chicken Dijon

I made Chicken Dijon last night for dinner and it was so yummy! I served it with couscous and broccoli, but you could have just plain brown rice and that would be good too.

Ingredients:
1 lb boneless skinless chicken breast cutlets
1⁄8 teaspoon salt
1⁄8 teaspoon pepper
1 tablespoon butter
1⁄2 red bell pepper, chopped
1⁄2 cup diced sweet onion
1 cup chicken broth
1 tablespoon flour
1 tablespoon Dijon mustard

Directions:
Season chicken with salt and pepper. Melt butter in a large skillet over medium-high temperature. Add chicken and cook until browned. Remove chicken from skillet and set aside. Add bell pepper and onion; cook until tender. Return chicken to skillet. In a separate bowl, whisk broth, flour and Dijon, until smooth; pour over chicken. Cover skillet and simmer 20 minutes.
