Friday night was Greek Baked Chicken.
⅓ c olive oil
¼ c lemon juice
1 t salt
¼ t pepper
Garlic powder, to taste
½ t dried oregano (I used an Italian blend of spices)
3 lb whole chicken
Stir together olive oil, lemon juice, salt, pepper and oregano. Place chicken in shallow dish; pour oil mixture over chicken. Cover; marinate in refrigerator 8 hours. Remove chicken from marinade. Discard marinade. Place chicken, breast side up, on a rack in a shallow roasting pan. Bake at 450 for 45-60 minutes or until thermometer in thigh registers 180. (We have a George Foreman Contact Roaster, so that is what I used, but the oven works just as good.)
I served this with a Greek salad, and crescent rolls.
Prep time: 10 minutes, plus 8 hours to marinate
Cook Time: 45-60 minutes
Total: 1 hour - 1 hour 10 minutes, plus 8 hours
The chicken turned out really good. It was moist and had a good flavor. Enjoy!
